What's for dinner 9/10/2010: Chicken broccoli cheese casserole

So last night's Feingold friendly dinner was yummy, filling and a family favorite.  Chicken, broccoli & cheese casserole with cute baby artichokes.















Chicken Broccoli Cheese Casserole (this can be made GF)
Serves 6-8

1lb cooked chicken, shredded
1 cup cooked brown rice
1lb fresh broccoli, chopped
2 tbsp of butter
2 tbsp flour (or brown rice flour)
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dried mustard
1 1/2 cups milk of choice
squeeze of lemon 
1 tbsp of mayonnaise
1 1/2 cups cheddar cheese, shredded
1/2 cup bread crumbs (or GF bread crumbs)
1/4 cup slivered almonds (only if FG ST2)

Melt butter in a medium saucepan.  Add the flour, salt, pepper and mustard, cook 2-3 minutes until bubbly and foamy.

 Slowly whisk in the milk, mayo and lemon and cook until thickened.

Stir in the shredded cheese.

Place the rice, chicken and broccoli in a casserole dish and pour the sauce over sauce over the top.

Spread the breadcrumbs and almonds (only if ST2) on top.

Bake uncovered for 30 minutes at 350

Now I usually add more rice than what is called for since i have a family of 5 and hubby likes leftovers (has been rare lately) and I served this with cauliflower for dinner.

The results...even my 5 year old ate it all up...this is an easy and inexpensive meal...ENJOY!
